Favorites For My Little People
Apple and Sweet Potato Bake
Quick and Easy
Drizzle melted butter over the top
and sprinkle some sweetener and pecan meal.
Yummy.

Oatmeal Bake
The recipe is the one a posted a few days ago.
Peanut butter bake is still the number one favorite.
Make it the night before and pop it in the oven in the morning.

Lots of veggies and beans and my favorite ingredient...cream cheese.
Just add chips and a smoothie.

Favorite Breakfast this month
Baked Oatmeal (modified from a fellow homeschool mama)
1 1.2 cup rolled oats
1/4 cup coconut flour (or WW flour)
2 cups kefir (or buttermilk)
1/2 cup butter (or coconut oil)
4 eggs
1/4-1/2 cup honey (or sweetener of your choice)
1 tsp baking powder
1/2 tsp salt
1 T cinnamon
2 tsp almond extract (which I don't have so I used vanilla)
1 cup dried cranberries (or cherries)
1 cup slivered almonds
Lots of flexibility as you can see...yummy however you like it.
Mix all ingredients in bowl. Pour in 9by 13 inch pan. Refrigerate overnight. Bake uncovered for 30-40 minutes at 350 degrees. Serve warm with milk or maple syrup poured over the top. We usually just have it with milk. If you have any leftovers tastes great cold as well. Wish I was eating this right now.

Sports Car
Jesse fixed up a repairable this winter and I have been driving it to work. It is a LaSabre...not sure on the spelling or the year of the car. It is white. Jesse wanted to know how it worked out for me this past weekend and I told him I felt like a kid driving such a small car. He informed me that it was not such a small car, but compared to a van, that rear windshield sure is close. Then, Sunday afternoon as I headed out the door to work he reminded me not to speed in my little sports car ;) Times change, right?
