Favorite Breakfast this month

Baked Oatmeal (modified from a fellow homeschool mama)

1 1.2 cup rolled oats
1/4 cup coconut flour (or WW flour)
2 cups kefir (or buttermilk)
1/2 cup butter (or coconut oil)
4 eggs
1/4-1/2 cup honey (or sweetener of your choice)
1 tsp baking powder
1/2 tsp salt
1 T cinnamon
2 tsp almond extract (which I don't have so I used vanilla)
1 cup dried cranberries (or cherries)
1 cup slivered almonds

Lots of flexibility as you can see...yummy however you like it.


Mix all ingredients in bowl.  Pour in 9by 13 inch pan.  Refrigerate overnight.  Bake uncovered for 30-40 minutes at 350 degrees.  Serve warm with milk or maple syrup poured over the top.  We usually just have it with milk. If you have any leftovers tastes great cold as well.  Wish I was eating this right now.
