JLT Thursday Tidbit

Oops....I missed Tuesday, again.

JLT Tuesday Tidbit

Today is Tuesday and I am actually here in front of my computer to enter my tidbit for the week. I wanted to share with you a book that really got me thinking about what I eat. I guess it did a great job of encouraging me to search for healthy meals and foods and opened my eyes to some things I had never really thought about before in relation to health...i.e. sun exposure and the pasteurization of milk among other things.

The book is called, WHAT THE BIBLE SAYS ABOUT HEALTHY LIVING. The author is Rex Russell, M.D. His book contains all kinds of wisdom for healthier living, including three principles that will change your diet and improve your health.

1. Eat the foods God created for you
2. Don't alter God's design
3. Don't let any food or drink become your God

A couple titles of chapters included in this book are....

Eating right in a world gone wrong
and
Health with obedience

And then he has a chapter about the different food groups:
Going with the grain(and nuts, too)
The fat of the land
The meat to eat
How sweet it is
Mom was right: Eat your fruits and Veggies
The spice(s) of life
Beverages: Elixirs of life- or death

It also includes a health IQ

There is all kinds of good information inside. If you are interested and live close you may borrow my copy, otherwise I hope your library carries it. If you read it, let me know what you think.

JLT Tuesday Tidbit

Okay, other than my reminder to vote today I have a website with a quick summary of ways to eat healthier. Although I don't agree with everything in the article it is a great summary of some simple changes to making healthier food choices. The website also has a great list of all kinds of foods with nutritional information and recipes. Have fun digging around their website if you have the time.

JLT Thursday Tidbit

Oops....it is Thursday again already. Where does the time go? It was sunny and bright out today so I thought I we would eat our lunch outside on the go. So, here is a quick lunch idea.

Green smoothie...with:
Leftover yogurt (homemade, I will have to post the recipe next time) about 1 cup
1 banana
2 handfuls of frozen chunks of mangoes (from Trader Joe's in the freezer section)
1/2 cup of orange juice (don't usually add this, but Grace's request)
Stuff the blender full of spinach

Blend and drink....oh so yummy....

And then I cut up an avocado into bite size pieces and drizzled with raw honey and then Grace sprinkled with dried coconut(the no sugar added kind)


And there you have it! A wonderful fall lunch to enjoy outdoors.

JLT Tuesday Tidbit

It is Tuesday and it has been too long since I posted. And this is going to be quick. More tomorrow, perhaps. I am so excited. I found a new dehydrator on ebay and got it for a super good deal. Anyway, tonight is my first night of trying it out. I did four trays. One with just bananas b/c I had a bunch that I thought would be good for snacking. I made one row of fruit leather. And the other 2 are flax crackers. I am looking forward to lots of experimenting with different recipes and will post any favorites I come across.

JLT Tuesday Tidbit

A Recipe For Today... My girls love graham sticks, but I am not too excited about the partially hydrogenated vegetable oil. And the ones in the health food section are a bit too pricey. So, here is an easy recipe and they are super yummy. This recipe is from the book Simply Natural Baby Food by Cathe Olson.

Cinnamon Graham Crackers

4 Tbs of coconut oil at room temperature(or butter, if you prefer)
4 Tbs honey or pure maple syrup
1 egg
2 cups whole wheat pastry flour(whole wheat works, too)
1/2 tsp baking soda
1 tsp cinnamon
1/4 tsp sea salt

Preheat oven to 350 degrees. Beat oil and sweetener together until light and fluffy. Add egg and beat until smooth. In separate bowl, whisk flour, baking soda, cinnamon, and salt together. Use low speed on mixer and beat flour mixture into wet mixture. The dough will be crumbly, but should hold together when pressed in your hand. If it is too dry, add a little water.

Press dough into baking sheet. Score into squares(I make mine the shape of the sticks at the store). Prick each square several times with a fork. Bake for 15 minutes or until edges are golden. Cool and break into pieces.

JLT Tuesday Tidbit

Cookies!
A thank you to Rachel for these cookies. After we left your place Grace wanted to make the cookies and we have made them a couple of times since your playdate. So, here is the recipe for Grace's current favorite. We just made them last night and she loves to help and I am learning to let her do more to "help". We made a few changes to make them our own.

Breakfast Cookies
(of course, Grace thinks this means we should eat one each morning with our breakfast)

1- 1 1/2 cups Sucanat
2 cups rolled oats
3 cups whole wheat flour
1 cup ground flax seed
1 Tbs baking soda
1 tsp baking powder
1/2 tsp salt
2 Tbs cinnamon
1/4 cup coconut oil
3 eggs
1/2 cup applesauce
1/2 chopped dried fruit (you choose)
1 cup chopped walnuts

Preheat over to 325
Mix all ingredients together in large bowl
Work with batter and form into 2 inch balls
Place on cookie sheets 2 inches apart
Bake about 8 minutes for soft cookies
Cool
Enjoy!

P.S. You may substitute honey for the Sucanat and butter for the coconut oil. Hope this helps!
