Our new favorite granola recipe

I have been making this and we have been gobbling it up and sharing with others, too, so they can enjoy. I like it for breakfast as my cereal. Jesse takes it to work in a little baggie. And it goes great over yogurt, too.

Millet Crunch Granola

2 1/2 cups rolled oats
1/2 cup uncooked millet
1/3 cup honey or agave nectar or maple syrup
1/4 cup natural peanut butter (skip the ones with hydrogenated oils and sugar)
2 Tbs of water
1/3 cup pumpkin seeds
1/3 sunflower seeds
1 Tbs freshly ground flax seeds
Optional: 1/2 cup no sugar added coconut
Optional: 2 Tbs of coconut oil

Preheat oven to 250 degrees. In small pan melt PB, sweetener, water, and oil over low heat. In a large bowl toss all dry ingredients with the PB mixture until completely coated. Spread on baking sheet and bake for 30 minutes. Stir once during baking. Cool completely and enjoy!

I usually double this recipe as this only lasts a day or two for us.

millet- great source of protein and iron (great for a pregnant momma like me)
pumpkin seeds- great source of protein, iron, zinc, and Vit A
sunflower seeds- high in protein, also a good source of calcium, iron, and Vit A, D, and E

Note to Liz, I was thinking this would be great with sunflower butter to get rid of the PB allery issue. I have never bought the sunflower seed butter, though. Let me know.

I can find all of these items in the bulk or natural foods section at Cash Wise. Although, I just bought most of these items in bulk from Azure Standard in bulk this last month as it is a staple in our home right now. More about my thoughts on Azure in the future.

Projects





Here are a couple of pics of my accent walls. Hadassah and I were home yesterday morning together while Jesse and Grace had to run an errand so she got grin for the camera. A little splash of color here and there to brighten up the place. The photo doesn't quite do the green color in our room justice. But it gives you an idea. The girls are adjusting to their new bed situation. Grace fell out of her bed twice the other night. I don't know what she was doing, b/c she had been fine for the last month. They like to jump out of bed sometimes at night, so with discipline and time we should be ready by summer. I am thankful we moved them to their new beds when we did so they have time to adjust. Today they told me we should name the baby, McKenna. We get a local paper that has pics of the babies born each week and I have been checking the names to see if there are any that I like. So, that is the name of the day. It is fun to hear them come up with ideas. Well, just waiting for the pics to pop up on here.

May is here!

What a beautiful day! So warm and sunny still, despite word of rain for the week. The girls can't enough of the outdoors and riding bikes and such. The girls are down now and I thought I would post, quick. Jesse has a long day today, he won't be home until late. I went to Bible study this morning with the girls. Then, headed over to my appt. with Joy. Baby is still busy kicking and growing. I am 26 weeks! Sometimes that seems far along and then the next day I feel like August is so far away. My back pain continues to be a nuisance, but I have been diligent in my stretches and increasing my exercises. I hope this continues to help. We have been doing some garden work. It is tilled. We have some strawberry plants in and the raspberry bushes. I planted spinach, carrots, beets, and radishes with the girls this week. They can't wait to plant the watermelon and pumpkins. We planted some bean plants in cups indoors with them to watch and care for while we wait for it to warm up. And we tried planting tomatoes and peppers indoors this year, but they aren't looking so great so I might still have to but some bigger plants in a couple of weeks. Other than that, just doing a little spring cleaning. We sold the Durango and now have a Windstar. The girls are ecstatic. Me, I never thought I would own one. But I am thankful for a vehicle. Hadassah thought we bought a firetruck. Or at least that is what she told Nana and Papa when they stopped by. It isn't even red. Not sure where that one came from. I also painted an accent wall in our room and the girls'. Not a good idea for my back, but I like how both rooms turned out. We had everything except the bathroom sprayed in one color when we built b/c I was pregnant and not up to painting everything. Well, I have been wanting to add a few splashes of color. I will have to take a couple of pics and add those the next time. I also have a couple of new recipes we have enjoyed recently and I hope to add those, too. Yummy. Time for a snack for baby and me.
